BEE MOVIE In honor of Jerry Seinfield's November 2 opening of BEE MOVIE, we are offering some
tasty honey recipes courtesy of the National Honey Board.
Peanut Butter & Honey Silly Sushi Roll-Ups Makes 2 servings
Ingredients: 4 slices wheat bread
1/2 cup smooth peanut butter
1/2 cup pure honey
2 Tbsp. nuts, finely chopped (sunflower seeds, almonds or walnuts)
1/4 cup strawberries, finely diced
4 skewers (optional)
Additional fresh fruit such as kiwi, strawberries, grapes or pineapple (optional)
Directions: Trim crusts from bread. Gently press bread or flatten with a rolling pin. Spread each slice with 2 Tbsp. peanut butter and 2 Tbsp. honey. Sprinkle two bread slices with 1 Tbsp. nuts each. Sprinkle remaining slices with strawberries. Cut each slice in half. Firmly roll up each slice and serve, or
thread the roll-ups and fruit onto skewers and serve as kabobs.
Pineapple Orange Honey Smoothie Makes 5 8-ounce servings
Ingredients: 1 cup milk
1-1/2 cups pineapple, diced
1 cup plain yogurt
1/3 cup pure honey
2 Tbsp. orange juice
1 tsp. orange zest
5 to 10 ice cubes (optional)
Directions: In a blender, combine all ingredients except ice cubes and blend until
Honey Pumpkin Pie Makes 8 servings
Ingredients: 3 eggs
1 9-inch un-baked deep-dish pie crust
3/4 cup honey
1 15-ounce can pumpkin
1 cup evaporated milk
2 Tbsp. flour
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt Honey Whipped Cream
Ingredients: 1 cup whipping cream
3 tablespoons honey
1 teaspoon vanilla
Directions: Preheat oven to 425°F. In a medium bowl, beat eggs. Brush one tsp. beaten egg on inside of pie crust. Place crust on a cookie sheet and bake for 5 minutes. Meanwhile, add the rest of the ingredients to remaining beaten eggs and whisk to combine. Remove pie crust from oven, and carefully pour honey
pumpkin mixture into hot crust; bake 5 minutes more at 425°F. Reduce heat to 350°F, and bake 30 to 40 minutes more, until filling is set. Cool completely and serve with Honey Whipped Cream.
To make Honey Whipped Cream, beat whipping cream until mixture thickens; gradually add honey and vanilla and beat until soft peaks form. Tip: For Honey Walnut Pumpkin Pie, just before serving, combine 1/3 cup honey, 1/3 cup chopped walnuts, and 1/4 cup vanilla. Carefully spread over pie; cut and serve.
